In the past we could not get waterfowl processed at the Amish run, USDA inspected plant nearest the farm. Waterfowl are time consuming to process because of water resistant feathers.
Several hundred years ago French farmers raised domestic ducks resembling large mallards. Rouen Ducks make fine roasting ducks with rich, delicately flavored meat. Rouen ducks look like overstuffed wild mallards and are noted for quiet dispositions, beautiful plumage and appetite for insects.

Our poultry are only available through an early order program. Our birds are pre-sold and raised outside on pasture to produce poultry that is naturally juicy and rich tasting.
