Heritage Poultry: Rouen Ducks

Why is it difficult to get waterfowl processed? There is a shortage of inspected poultry processing capacity for small farms in Illinois. Plants stay busy with chickens and turkeys. Plus processing waterfowl is more time consuming and requires additional equipment.


Several hundred years ago French farmers raised domestic ducks resembling large mallards. Rouen Ducks make fine roasting ducks with rich, delicately flavored meat. Rouen ducks look like overstuffed wild mallards and are noted for quiet dispositions, beautiful plumage and appetite for insects.

Please note our heritage poultry are only available through an early order program. Our birds are pre-sold with pick-up at selected locations. Birds are raised slowly outside on pasture to produce poultry that is naturally juicy and rich tasting.
